Mughlai Paratha (Mughal chale toh gaye par kitna tasty tasty chhod gaye) 1/2hr story

Ye baat us samay ki hai jab mughal ja chuke the unke jaane k kuch 100 saalon baad pichle haftey, My mom said,"aaj raat mein aaaandey ki bhurji bana dungi khaa lena" when we checked for eggs I was delighted to know ki "Aaanda ek aur aadmi chaar" bahoot na-insaafi hai. But mom ka order mila jao aaaandey le aao. Then I decided to rebel, as I could not do it alone I had to go to someone for support and I thought who better than the mughals.  I made mughlai paratha. How ? Lets take a look into it

1. sabse pehele ek badhiya stuffing tayyar kar li jaye. ab obviously Mughals involved hain toh there will be non veg so sorry veggies but eggies can have the pleasure of tasting this delicious PARATHA. ab muddey ki baat you can either get mutton mince(keema) for it or can put chicken shreds and eggies put paneer or mushroom. I'd put chicken into it. O yaar kyunki uski dukaan paas thi. Chicken laya Aaandey bhi laya chicken ko dhoya aaanda bohot roya. thik hai thik hai aagey badhtey hain. put the chicken on boil u can boil it simply or you can use some variation like put a little butter in the hot cooker(bongs its cooker not COOkad). crush a garlic clove and put 2-3 crush pepper with it. now put the chicken into it and saute it till the chicken changes its color form pink to white, add some salt. now put some water in it, so much so that the chicken is fully dipped. Now put it on pressure for 3-4 whistles. After taking out the chicken peel off the flesh from the bones or viz., my advice don't throw the bones away you can make soup/stock from them there is still lot of juice left in it just crush a little and use.
    Now toh addd some spice to the chicken. hum batata hu kaiiise. thoda butter/oil pan me garam kar lo 2-3 lehsun/garlic and hari mirch/chillies finely chop karke usme daal do remember do not try to get your lehsun brown. jab garlic ki khushbu  aane lagey that means it is fried now put some finely chopped onions. saute it till its translucent mind it not brown coz we are not trying to make chicken masal so keep it simple. And also remember whenever you are cooking something with onion and you dont intend to put masalaaas into it then dont ever make it brown eg; in frying the leftover rice or chowmin.
  So now put your shredded chicken into it. Here what I did was I kept on adding the soup of the chicken into this mix as soon as it dried so this made it more delicious. just make it a little gravy like. and then keep it aside to cool.    
2. Now toh break-an- egg depending on how many people are gonna eat. An egg/person. Whisk it nicely till its foamy. Then add your stuffing to it if it has cooled off.(mind it iff you are putting a hot mix in the egg you'll end up eating scramble). mix it well

1. Finally  roti banayenge now you must be thinking naam hai paratha aur bol raha hai roti banayenge! arey aagey to suno ni. roti belne k baad sirf 1 side halka  sekna hai do not do the other side.so jitni roti aap daily k estimate se banatey ho banake k hot case me rakh lo. But make it large so much so that it covers max surface of your tawa.


Climax:
Ab jo roti apun log banaye la hai usko lekar tawa par dalo the kaccha side to the pan. ab iske upar apney aaandey ka mix daalo. Now fold the roti from all four directions and try to make it a square. Now comes the most easy part Flipping it! Yes you have to flip it and you can do it. just put you spatula under the roti press all the folded sides with a finger and in less than a second flip it.
After flipping it put some oil/ghee on it and around it. roast it well like a paratha. and Voila your MUGHLAI PARATHA is ready. Noash farmaye huzoor!
