Aaj ki kahaani its different director was changed story writer wahi hai. So kuch yu hua happen ki my mom went to pay a visit to my chhoti naani. aaagey ki kahani aap sunenge Chinku (my brother) ki zubaani. So ladies and the laidas I present to you Aishwary Mandal urf Chinku urf my little brother. Kahaani ka Title kuch aisa hai wo kya hai kaafi samay se people were asking me to put something VEggie so here it is. 
Aloo Cheese Malai (cooked for everyone's bhalai)  by Chinku's kalaaii..!




Ingredients:
  1. Potato (Aloo)
  2. Garlic- 4-5 Cloves
  3. Chillies- 3-4
  4. Butter- 100-150 grams
  5. 1 Cheese Cube
  6. Cream (Malai) - 3-4 Tablespoons
  7. Tomato- 2 
  8. Oregano powder
  9. A little Coriander
  10. Salt (Namak-shamak)


Procedure:
  1. Take 100 grams of butter in the pan...for frying the diced potatoes (Katae hue aloo). Add a little Salt and Stir it for a while.
  2. Now, add sum chopped garlic and chillies in it. Stir it nicely and put a lid on it and keep it on lower flames.
  3. Take 2 Tomatoes, cut it in random shapes. Then take the cut tomatoes in your hand and..crush it..!
  4. After that, take cheese cube n chop it to very small pieces. Now, mash the cheese with a fork (or anything else..!!) n add a tablespoon of Cream to it. Slowly add 2-3 tablespoons more of Cream and a tablespoon of Butter. You have to mash it continuously till the Cream n Cheese mixed perfectly... You can add some milk in the mixture to make it consistent.
  5. Remember one thing...beech beech mein pan ka lid utha kar dekhte rehna ki Aloo ke kya haal hai...
  6. Now open the lid and add some Oregano and a little coriander...stir n put the lid again.
  7. After a few seconds, add the Creamy Mixture in the pan. Add some Salt and Stir it gently n properly. Put the lid on for few minutes.
  8. Serve Hot...!!!

So my priya ladies and the laidas this was the kahaani from Chinku's zubaani. This proves ki usko bhi aati hai aalooos ki sabji banani. So aap bhi jao ni banao ni aur khao ni. Do leave your comments on how did you like my brother's cooking.

Mughlai Paratha (Mughal chale toh gaye par kitna tasty tasty chhod gaye) 1/2hr story

Ye baat us samay ki hai jab mughal ja chuke the unke jaane k kuch 100 saalon baad pichle haftey, My mom said,"aaj raat mein aaaandey ki bhurji bana dungi khaa lena" when we checked for eggs I was delighted to know ki "Aaanda ek aur aadmi chaar" bahoot na-insaafi hai. But mom ka order mila jao aaaandey le aao. Then I decided to rebel, as I could not do it alone I had to go to someone for support and I thought who better than the mughals.  I made mughlai paratha. How ? Lets take a look into it

1. sabse pehele ek badhiya stuffing tayyar kar li jaye. ab obviously Mughals involved hain toh there will be non veg so sorry veggies but eggies can have the pleasure of tasting this delicious PARATHA. ab muddey ki baat you can either get mutton mince(keema) for it or can put chicken shreds and eggies put paneer or mushroom. I'd put chicken into it. O yaar kyunki uski dukaan paas thi. Chicken laya Aaandey bhi laya chicken ko dhoya aaanda bohot roya. thik hai thik hai aagey badhtey hain. put the chicken on boil u can boil it simply or you can use some variation like put a little butter in the hot cooker(bongs its cooker not COOkad). crush a garlic clove and put 2-3 crush pepper with it. now put the chicken into it and saute it till the chicken changes its color form pink to white, add some salt. now put some water in it, so much so that the chicken is fully dipped. Now put it on pressure for 3-4 whistles. After taking out the chicken peel off the flesh from the bones or viz., my advice don't throw the bones away you can make soup/stock from them there is still lot of juice left in it just crush a little and use.
    Now toh addd some spice to the chicken. hum batata hu kaiiise. thoda butter/oil pan me garam kar lo 2-3 lehsun/garlic and hari mirch/chillies finely chop karke usme daal do remember do not try to get your lehsun brown. jab garlic ki khushbu  aane lagey that means it is fried now put some finely chopped onions. saute it till its translucent mind it not brown coz we are not trying to make chicken masal so keep it simple. And also remember whenever you are cooking something with onion and you dont intend to put masalaaas into it then dont ever make it brown eg; in frying the leftover rice or chowmin.
  So now put your shredded chicken into it. Here what I did was I kept on adding the soup of the chicken into this mix as soon as it dried so this made it more delicious. just make it a little gravy like. and then keep it aside to cool.    
2. Now toh break-an- egg depending on how many people are gonna eat. An egg/person. Whisk it nicely till its foamy. Then add your stuffing to it if it has cooled off.(mind it iff you are putting a hot mix in the egg you'll end up eating scramble). mix it well

1. Finally  roti banayenge now you must be thinking naam hai paratha aur bol raha hai roti banayenge! arey aagey to suno ni. roti belne k baad sirf 1 side halka  sekna hai do not do the other side.so jitni roti aap daily k estimate se banatey ho banake k hot case me rakh lo. But make it large so much so that it covers max surface of your tawa.


Climax:
Ab jo roti apun log banaye la hai usko lekar tawa par dalo the kaccha side to the pan. ab iske upar apney aaandey ka mix daalo. Now fold the roti from all four directions and try to make it a square. Now comes the most easy part Flipping it! Yes you have to flip it and you can do it. just put you spatula under the roti press all the folded sides with a finger and in less than a second flip it.
After flipping it put some oil/ghee on it and around it. roast it well like a paratha. and Voila your MUGHLAI PARATHA is ready. Noash farmaye huzoor!

Maggi Noodles (ye kahani Different hai)
Plot:
1. Sabse pehele apne good old maggi ko boil kar lo(ye thoda different hai).
Paani chadha do boil hone k liye not to worry about the measurement. thoda ginger bhi koot k daal do. Then what you do jaise hi the water starts bubbling usme maggi daal do and let it boil. Jaise hi thoda paani kam ho jaye put 2-3 spoon of oil(chhote chammach yaar). Let it cook a little more. check the consistency of the noodles it should not be chew neither too much cooked. if its cooked to your satisfaction take it off the flame. ab jo isme thoda bohot paani bacha hai usko chhaan lo, aur isme aur achhe se paani daal do(hua naa different) agar ghar me clean running water hai aur strainer(chhanna) hai to running water me rinse kar lo. isse aapki noodle ki consistency safe ho jayegi.
2.ab onion ko chhota chhota chop kar lo do the same with lehsun, hari mirch, tomato and dhaniya-pudina.  

The story:
Sabse pehele oil gaya frying pan. Jaise hi oil garam hua uske peeche thoda butter  bhi kood pada jaise hi butter pighla hai entry ho gayi lehsun aur mirchi ki phir jo action aur jo sound effect hua hai. jaise hi ye dono thode shaant huye(mind it not burnt) pyaaz ki ho gayi dhamake daar entry. phir jo chammach ne inke saath dhishum dhishum ki hai, kya special effects kya sound. jaise hi onion thoda cook hua. action ko aur beheter banane tomato sauce aa gaya(thoda). in sabke mix hote hi mera ek special effect 'Flambe' for this you need your flames to be at high throughout. now if you wanna do this all you need is fist full of water! Just throw the water with a bit force on to the pan and immediately lift the pan and shake it voila Flambe! just keep a bit bit distance from the pan and keep shaking it by the handle till the Flames die.
Now what you have is a sweet smokey flavour .
Ab laal tamatar ki entry hoti hai aur sara mamla shaant jab tak ki tamatar thoda cook nahin ho jata. Now you can put your maggi masala half of the quantity than usually used. Phir hari dhaniya aur pudina akar sab kuch flavorful kardeti hain. just add a little water to make it little saucy.

bas ab kya final entry hamare noodles(ab mix toh khud karlo yaar). Happys Endings.

JUNGLE mein MAN-GAL (with chicken in brackets)!
OUTDOOR COOKing ka apna alag hi maza hai. I always have a lot of fun doing it. Last december me my bro my cousin her husband n kid bethe bethe plan bana aur nikal gaye "Picnic" k liye n that too after 2 in the noon, just imagine the heights of stupidity(mind it we have just begun to climb). we decide to cook chicken(barbecued). I'd put all my tools in one bag Sis ko bola ki biryani ka leftover rakha hai wo rakhlena to PAIT(plz) bhi bhar jayega. so wat she did jis bag me mene sara cooking ka saman rakha tha she took out every thing n then usme biryan(sirf rice) packs rakh diye but forgot to put the things back. we went to a dam some 25km from home. chicken rastey se khareed liya tha. I thought of buying a quarter of a whiskey to make the chicken more smokey. THis decision really helped later on. Jab dam par pahunche n after we setlled down, meine apni sis se kaha give those seenks which i'd put in the bag. she went through the whole bag but couldn't find any then asked for the masalas that too she had left back yaar salt tak bhul gaye the. ab kya karey ?! thank God. she did'nt took the knife out so it was there. as i use a big choping knife it really helped. first what i did was to put the chicken in very little whiskey left it to marinade. then my bro went to buy some salt as there was a small tapra near the dam, he came back with some salt wrapped in a news paper and also my bro-in-law bought a box of matchsticks(as we'd forgotten that too) . now the ultimate question was cook kaise karenge? as we did not take any utensil thinking that we will be grilling the chicken. Yahan par Discovery dekhna kaam aaya. remember 'Man vs Wild' Bear Grils. to usse inspire hokar i started looking for my option. And it took me a while but it came like BANG. I noticed that the trees around us were mostly Bamboo trees. suddenly an idea struck me  So what i did took my knife n began to cut a bamboo branch. after i'd cut 2-3 branches i splitted them in half. now you already must be getting the idea. Yes i put the chicken in middle of the split bamboo but now the question was to make it hold the chicken on the chulha we made then again my bro-in-law went looking for something to bind the bamboo n came back victorious with a piece of fencing wire . bas phir kya bamboo k beech me chicken usko wire se baandh k aag par jo bhoonja hai maza aa gaya. what i did was ki jo whisky bach gayi thi usko me bar bar chicken pe daal deta toh usse jo smokey flavor aya waah. then it took a lil while to cook then chicken ko bamboo se bahar nikala. it was smelling so yummy n when we ate it, it was  a delight. My brother named it 'BAMBOO CHICKEN'.
ghar me to sab khana banate kabhi bahar bhi try karo. So AAJ kuchh toofani kartey hain!

Omelette on Potato platters (Original Recipe) !

Haan bhai haan meri original recipe hai. kal hi to banaya tha. yeh ek bilkul nai kahani hai nothing like your old Omelette, ye kal ki basanti nahin aaj ki dhanno hai (whatever that means)! isme aalooo to hai but Dosa ki shakal me, isme omelette bhi hai lekin Pizza style me, aaya na kahani me TWIST! lets begin with our

Characters:(In the order of appearance)
Oil
Potatoe-da- Aaalooo(small)
Pyaaazzzz(medium)
Aaaande(depends on murgi)
Tamatarrr(medium)
Cheese Slices 2-3
Salt

Plot:
1.Aaalooo ko grate kar k achhe se dho lo (jab tak paani saaf nahin dikhta) aur paani me hi rehne do.
2.Aaande ko phet k rakh lo.
3. Pyaazzz aur Tamatarrr ko gol-gol kaat lo.
4. Pyaazzz ko stir fry kar lo on a high falme(for two min).
5. Cheese slices ko strips me kaat lo

Kahani:
Sabse pehele kisse hue aaalooo se paani chhaan lo achhi tarha se. Ab ek "Non-Stick Pan" par oil garam karo, phir uspe kisse hue aalooo ko dal kar ek layer form karo while doing this flame ko low heat par kar do. Aaalooo purey pan me evenly spread hona chahiye aur bich-bich me koi gap nai hona chahiye aur purey aaaloo ko halke-halke press karte raho.thoda namak purey pe chhidak do, ab ise fry hone do bich-bich me check karte raho if needed sides me oil daltey raho. ab ek spatula(chapta chammach) se uper lift karke dekho ek DOSEY ki tarha lift hoga agar niche se halka brown hone laga hai to thoda tez flame karo for10sec aur use ek plate me nikal lo. remember leave one side uncooked and place it upside on the plate.
Ab phitte hue Aaaande me thoda namak daalo dhyaan rahe aaloo me bhi namak hai. ab pan pe thoda sa oil dal k heat karo aur uspe aaande ko daal do flame ko low heat kar do. ab is par stir fried pyaazzz evenly spread kar do uske upar katey tamatarrr evenly place kardo. ab is par cheese slices ki strips is tarha se place karo ki saare tamatarrr cover ho jaaye.  flame ko band kar do.
ab apna potatoe platter(dosa) lekar is omelette par place karo uncooked upside. ab is par ek plate ko rakho ab pan ko plate sahit uthao aur turrantt plate par palat do ab aaapka omelette upar aur aaaallooo dosa niche aa gaya ab ise  isi position me pan par dhire se slide kar do before doing that don't forget to put some oil. ab pan ko lo flame par rakho aur 1-2min k liye ise dhak do. ab check karo ki aapka aaalooo dosa niche se brown ho raha hai if yes then again flame 10sec k liye high kar k band kar do.
Ab ise dhire se plate pe slide kar do. aapka Omelette on Potato platter tayyar hai.

Special Effects:
Hari dhaniya Kaat kar is par sprinkle kar do. u can put ginger julienne also.

Variation:
1.U can add stir fried shimla mirch with pyaazzz.
2. Instead of tamatarrr fried Chicken daal sakte ho.
3. U can put Keema too.

Egg Fried Rice! (vegetarian version bhi hai)

Bohot hi easy recipe hai ek baar bana loge toh baar baar banaoge.
Bhai jab ande ki bhurji ka milan chawal k saath hua toh Egg Fried Rice paida hua. Lets checkout the complete bio-data of  Egg Fried Rice.

Kahaani:
Sabse pehele ek deep pan or kadhai  lo aur usme thoda tel garam karo 3-4 chammach make it very hot. usme fir 3-4 katey hue lehesun aur hari mirch daal do, lehesun halka golden hote hi usme 2 Aaande daal do lehesun ko jalne na dena nahin to kahani puri kadhvi ho jaayegi. aande daalte hi ek flat spoon(spatula) se usko hilaate hue scramble (tukde-tukde) kar lo bhurji ki tarha. Ab ise achhe se fry karte jaao aur aaande ko todte jaao aapke aaande (sorry murgi k hain) jab chhote chhote tukde me ho jaye toh uspe 2 pyaaz daal do aur usko fry karte jao now put some adrak also ab in sabko lagataar fry karte jaao, n remember is purey duration me gas ki flame high pe honi chahiye isi liye toh kahani ka Plot(Tayyari) pehele se banakar rakha hai. Jab pyaaz transparent hone lagey tab usme 2 tammatarrr kate hue daal do aur bhurji ko chalate jao now put some laal mirch aur kaali mirch powder by taste aur fir bhurji ko chalate jao (high flame par) tammatarrr halke se pakne lagey to usme hari dhaniya daal do dhyaan rahe bhurji ko lagatar chalate raho jisse wo jaley na ab apni kahani k climax pe pahunchtey hue is good looking bhurji me namak(salt) daal do,  fir puri bhurji me mix karo achhe se mein hamesha namak haath se daalta hun not chammach nai to pata nai chalta kitna daala kitna nai.namak hamesha thoda thoda karke hi daalo aur bich bich me taste karte jao nai to agar namka zyaada ho gaya to samjho kahani flop. so just mind ur taste baaki sab apne aap ho jaayega! ab aayi baari hamarey second lead role chawal ki toh ab jo pakey hue chawal aapne haath se alag kiye the lagbhag 2 cup usko bhurji me dal do aur achhi tarha mix karo jab tak ki ek ek daana na rang jaye, jab achhe se mix ho jaaye to 2-4 min aur fry karo ab taste karo ki namak thik hai ya nai. just mind your taste, follow your tounge and do what it says   
Ab is puri kahani ko ek dish yaa plate me nikaal lo. Aaapka Egg Fried Rice tayyar hai. Mazey karo!

aap isme paneer ko haath se masal k daal saktey ho.
